 Diacetyl Tartaric Acid Esters of Mono and Diglycerides (DATEM) is ivory or straw yellow powder or granular solid which is easily soluble in hot water. It is a non-ionic emulsifier with HLB value of 8-10.

How to use DATEM?

1. Add this product to warm water at 60 degrees Celsius and make paste. Then add it to the appropriate ratio.

2. The product is first dissolved with oil and then processed further.

3. Mix flour and this product directly and evenly.

Packaging in net 25 kgs cartons/bags/drums.

    Reply: At present, do not need inspect by CIQ.

  2. Can we make the Health certificate from CIQ?

    Reply: Datem does not inspect by CIQ, and CIQ can not provide the health certificate, CIQ can only provide the goods which need CIQ inspected, but now, we can provide the certificate from the third organization.

  3. Can Datem used in cookies?

    Reply: Can be used in cookies, but normally, the Calcium stearoyl lactylate used into the cookies more.

  4. DATEM used in bread, why can prolong bread shelf life?

    Reply: DATEM belongs to food emulsifier, It has good water holding capacity, so it can extend the shelf life. 

  5. How to distinguish the advantages and disadvantages of DATEM?
